Traditional sun-drying does not control the critical control points<\/span><span data-contrast=\"auto\">,<\/span><span data-contrast=\"auto\">\u00a0which is a step in the process and affects the product quality, making the chips prone to contamination by rodents, dirt, and insect infestation during drying, leading to food insecurity and food poisoning. In contrast, solar-tent drying is an unconventional sun-drying technology, which is an evaporative drying process with the greenhouse principle. This method supports food security and improves nutrition.<\/span><span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span>\n\n<span data-contrast=\"auto\">Mycotoxins,<\/span><span data-contrast=\"auto\">\u00a0produced by certain types of molds\u00a0<\/span><span data-contrast=\"auto\">ou\u00a0<\/span><span data-contrast=\"auto\">fu<\/span><span data-contrast=\"auto\">ngi,\u00a0<\/span><span data-contrast=\"auto\">grow on numerous foodstuffs such as cereals, dried fruits, nuts<\/span><span data-contrast=\"auto\">,<\/span><span data-contrast=\"auto\">\u00a0and spices. Mold growth can occur either before or after harvest,\u00a0<\/span><span data-contrast=\"auto\">during storage, on\/in the food itself<\/span><span data-contrast=\"auto\">,<\/span><span data-contrast=\"auto\">\u00a0often under warm, damp<\/span><span data-contrast=\"auto\">,<\/span><span data-contrast=\"auto\">\u00a0and humid conditions. Most mycotoxins are chemically stable and survive food processing.<\/span><span data-contrast=\"auto\">\u00a0These fungi cause food poisoning and food insecurity due to improper food storage.<\/span><span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span>\n\n<span data-contrast=\"none\">Researchers carried out a<\/span><span data-contrast=\"none\">\u00a0<\/span><a href=\"https:\/\/doi.org\/10.1016\/j.foodcont.2020.107467\"><span data-contrast=\"none\">\u00e9tudier<\/span><\/a><span data-contrast=\"none\">\u00a0<\/span><span data-contrast=\"auto\">to assess the mycotoxin profile of solar tent-dried and open sun-dried plantain chips in Nigeria.
